Raspberry Filled Chocolate Cupcakes with Cream Cheese Frosting

Rich chocolate cupcakes with raspberry fruit filling and topped with smooth cream cheese frosting, these delicious cupcakes are absolutely amazing. Nobody would even suspect that they are super easy to make (I’m beginning to notice a little trend with my baking lately…maybe one of these days I’ll make something that takes a little extra time). 

Raspberry Filled Chocolate Cupcakes with Cream Cheese Frosting

Ingredients:
1 chocolate cake mix, baked according to box directions (could use lemon or vanilla instead) – I used Duncan Hines Devil’s Food Cake Mix
1 can raspberry pie filling (I used a 21 oz can to fill two batches of cupcakes with a little leftover)
cream cheese icing (recipe follows)

Directions:

Bake your cake mix into cupcakes according to directions (regular or mini — your choice. We love mini cupcakes at my house). Cool cupcakes completely.

Fill the cupcakes: There are a couple of ways to fill the cupcakes. Here is a great tutorial on Annie’s Eats with 3 methods to filling cupcakes.

I use a pastry bag and a bismarck tip – Place the tip into a pastry bag (be sure to not cut the tip of the bag too big or the tip will fall through). Fill the pastry bag with some pie filling (do not fill the bag too full…it can get really messy). Insert the decorating tip into the center of the cooled cupcake and gently squeeze in a little filling. I filled both the mini cupcakes and regular cupcakes.

Frost: Once the cupcakes are filled, they are ready to top. I love using a 1M tip for icing my cupcakes. You can check out Glorious Treats for a tutorial on Frosting Cupcakes.

Cream Cheese Frosting
slightly adapted from Better Homes and Gardens New Cook Book

1 8 oz package cream cheese, softened
1/2 cup butter, softened
2 teaspoons vanilla
6-7 cups powdered sugar

In a large bowl, beat together cream cheese, butter and vanilla. Gradually add in powdered sugar until it reaches desired consistency. If you make it too thick, thin with a little milk.

So, I thought of you today when I was helping in a 6th grade math class and they were teaching the kids this “touch math” and I remembered you telling me not to do the dot method (same concept) because kids never grow out of it and it’s so slow.
