Looking for quick, easy, gourmet cupcakes to wow your friends and family?! Well this post is for you! I’ve seen this idea elsewhere but you can also find it in 101 Gourmet Cupcakes in 10 minutes by Wendy Paul.
First, start with your favorite chocolate cake recipe (or use a Duncan Hines Devil’s Food Cake mix…or whatever cake mix you prefer…I told you this was going to be easy).
Second, put a little bit of batter in your cupcake liners. Then put a whole Oreo (or any brand of chocolate sandwich cookie) in on top of the batter (I used the regular Oreos…but you could use Double Stuff, mint, whatever your heart desires). Do you like my little helper? She loves to put the liners in the cupcake pan and she really enjoyed filling them with Oreos.
Third, finish filling your pan 2/3 full and bake immediately. Following the box your recipe. Allow the cupcakes to cool completely before frosting.
Fourth, frost the cupcakes with your favorite frosting. I used an easy vanilla buttercream icing and mixed in some crushed Oreos. I tried frosting using my Wilton 1M tip, but it kept getting clogged. I finally decided to smear a little icing on using a knife. You can top them off with an Oreo or just leave them plain.
Yum! Easy and delicious! The frosting tasted like the cream filling (but better). These cookies and cream cupcakes are definitely a keeper! I am dreaming of modifications of this recipe for a while now…I just need and excuse to make some…anybody want some chocolate cupcakes?
Tip: You can make a variety of cupcakes with just one batch of batter. When I made these, I used half of my batter to make the Chocolate Peanut Butter Cupcakes and the other half to make these.
