Hard Boiled Egg Chocolate Chip Cookies

Say…What?! Yes, you read that correctly Hard Boiled Egg Chocolate Chip Cookies! I’m sure you are thinking the same thing I was when I first saw this post: “Eeww?!” or maybe “Don’t the cookies need fresh eggs to stick together?” I’m not a scientist, but I was very skeptical about using hard boiled eggs in place of fresh eggs. I was so skeptical and intrigued that I just had to try them out myself, it also helped that I had about two dozen hard boiled eggs from Easter sitting in my fridge.

While I have been debating about the timeliness of sharing this recipe now, I decided that summer is prime egg salad season. So, while you are boiling some eggs for your salads, cook a couple of extra to try in these cookies. Actually, you should try this steaming method of cooking your eggs. I haven’t used it yet, but next time I need/want some hard boiled eggs I am definitely going to try it out!

No worries…she didn’t touch all the cookies…just that one. A great thing about using the hard boiled eggs…I wasn’t too stressed out about her eating a little raw cookie dough. Although, I have to admit that it wasn’t my favorite tasting dough.

You can see the little egg pieces before they are cooked, but once they are cooked, they completely disappear. Unless you have brightly dyed eggs…I could see a couple of little colored spots. I don’t think anyone else noticed, I just meticulously inspected every cookie!

We all enjoyed them! I don’t think anyone I shared them with would have guessed the “secret ingredient.” I personally still prefer my regular favorite chewy chocolate chip cookies (you will just have to wait in anticipation for another post). I probably won’t boil eggs just to make these cookies, but if I already have some hard boiled eggs, I will make them again.
